Sweet and Spicy Roasted Wattleseed and Capsicum and Feta Bread Boats
Sweet and Spicy Roasted Wattleseed and Capsicum and Feta Bread Boats combine smoky roasted capsicum, creamy feta, and native wattleseed flavours for a deliciously savoury bite. This unique recipe from Australian Bush Spices is perfect for entertaining, lunch, or a flavour-packed snack.

Ingredients
- 8g (2 teaspoons) instant yeast
- 35g (2 heaped tablespoons) castor sugar
- 225ml lukewarm water
- 450g bread flour
- 10g Pink Salt Flakes
- 1 jar Roasted Wattleseed, Capsicum & Chilli Relish
- 100g - 200g crumbled feta cheese
- 1 egg, beaten
- Sesame seeds for sprinkling, optional
- Prosciutto or whole egg for topping, optional
Instructions
- Mix yeast, sugar, and water in a bowl. Let's sit for 5 minutes.
- Add flour and salt. Knead for 5 minutes until smooth. Cover and rest for 1.5–2 hours or until doubled.
- Preheat oven to 240°C. Line two trays with baking paper.
- Divide the dough into 6 pieces. Shape into ovals (15cm x 10cm x 0.5cm thick). Roll edges inward and pinch ends to create boat shapes. Place on trays.
- Fill each with 1.5–2 tbsp relish and top with feta. Brush edges with egg and sprinkle sesame seeds.
- Bake for 10–12 minutes until golden.
- Optional: Add prosciutto before baking, or bake boats for 8 minutes, then crack an egg into the centre and bake an additional 3 minutes.
