Roasted Cabbage With Bacon Breadcrumbs and Herb Sauce
Roasted cabbage meets crispy bacon breadcrumbs and vibrant herb sauce in this flavour-packed recipe using Extra Virgin Olive Oil with Lemon Myrtle from Australian Bush Spices. A delicious side dish with rich textures and native Australian flavours, perfect for entertaining or weeknight meals.

Ingredients
- 1 Savoy cabbage (about 1kg)
- 60ml Extra Virgin Olive Oil with Lemon Myrtle
- 3 rashers streaky bacon, finely chopped
- 1/2 cup Panko breadcrumbs
- Herb Sauce
- 125ml Extra Virgin Olive Oil with Lemon Myrtle
- 1/4 cup finely chopped mint
- 1/4 cup finely chopped parsley
- 1 lemon, rind finely grated and juiced
- 1 tbs finely chopped capers
- 1 tbs finely chopped shallots
Instructions
- Preheat oven to 220°C (200°C fan-forced). Place cabbage wedges on a large rimmed baking tray. Drizzle with oil, season, and toss to coat. Roast 15 minutes until browned. Carefully turn and roast another 15 minutes until tender and deep golden. Transfer to a serving platter.
- Meanwhile, cook bacon in a medium frying pan over medium heat for 5 minutes or until crisp. Remove from heat, discard excess fat, leaving 1 tbsp in pan. Add breadcrumbs and cook over
- low heat, stirring, until golden and crisp. Transfer to a small bowl.
- For the herb sauce: Combine oil, mint, parsley, lemon rind, 1 tbsp lemon juice, capers, mustard, and shallots. Season to taste.
Arrange roasted cabbage on a serving platter. Sprinkle with some bacon breadcrumbs and drizzle with herb sauce. Serve with extra sauce and breadcrumbs on the side.
