RED Recipes – Crusted Lamb

Ingredients
- Serves 4
- 500g lamb backstrap
- 2 tablespoons RED Australian Bush Spice
- 1 tablespoon olive oil
- 1 Turkish pide bread, cut into 4 pieces
- 100g salad leaves
- 2 ripe tomatoes, sliced
- 200g hummus
- 2 tablespoons mint
Instructions
- Trim excess fat from the lamb and roll in RED spice.
- Heat oil in a pan, and cook the lamb over medium heat until done to your liking.
- Toast Turkish bread until golden. Divide salad leaves over bread and top with sliced tomatoes.
- Slice the lamb and serve it with minted hummus. Top with the remaining toasted bread pieces.
