ORANGE Recipes – Vegetable Tofu Curry

Ingredients
- Serves 4
- 1 tablespoon macadamia oil
- 1 onion, finely chopped
- 2 tablespoons ORANGE Australian Bush Spice
- 300g firm tofu, cubed
- 250g orange sweet potato, peeled and cubed
- 1 carrot, peeled and sliced
- 1 zucchini, sliced
- 1 red capsicum, cubed
- 400g can of peeled chopped tomatoes
- 1 tablespoon sugar
- ¼ cup Greek yoghurt
- 2 tablespoons chopped fresh coriander
Instructions
- Heat macadamia oil in a pan, add onion and cook over medium heat for 5 minutes or until soft and golden.
- Add the ORANGE spice and tofu and cook until lightly browned.
- Add vegetables, tomatoes and sugar, bring to the boil, reduce the heat and cook 20 minutes or until vegetables are soft.
- Stir in yoghurt and coriander and serve.
