ORANGE Recipes – Lamb and Macadamia Korma

Ingredients
- Serves 4
- 500g diced lamb leg
- 2 tablespoons Greek-style yoghurt
- 2 teaspoons grated ginger
- 2 cloves garlic, chopped
- 2 tablespoons ORANGE Australian Bush Spice
- ½ cup macadamias
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 1 cinnamon stick
- 400ml coconut cream
Instructions
- Combine lamb and yoghurt in a bowl. Cover and marinate for 30 minutes.
- Grind ginger, garlic, ORANGE spice and macadamias into a paste, adding a little water if needed.
- Heat oil in a pan, cook onions 5 minutes until golden. Add lamb and cook 5 minutes or until browned.
- Add spice paste, cinnamon and coconut cream with ½ cup water. Bring to boil, reduce heat and simmer 30 minutes covered. Remove lid and cook 20 minutes until thick.
