Kakadu Plum Relish and Walnut Stuffed Baked Brie
Discover the rich flavours of this Kakadu Plum Relish and Walnut Stuffed Baked Brie by Australian Bush Spices. Creamy baked brie is filled with crunchy walnuts and native Kakadu plum relish, creating the perfect Australian-inspired appetiser for entertaining or special occasions.

Ingredients
- 1 tbsp Lemon Myrtle Olive Oil
- 1 small brown onion, finely chopped
- 100g walnuts, roughly chopped
- 6 large sage leaves, finely chopped
- 3 tbsp Kakadu Plum Cranberry Chilli Relish
- 2 x wheels of brie
- 2 squares of puff pastry
- 1 egg, whisked with a splash of milk
- Sesame seeds, dill and pomegranate pearls, to decorate
- Sea salt and Pepperberry
Instructions
- Heat olive oil in a frypan over medium heat. Add onion and cook until soft. Stir in walnuts, sage, and season with salt and Pepperberry. Cook for 2 mins, remove from heat, stir in Kakadu Plum Relish, and cool completely.
- Preheat oven to 200ºC. Line a baking tray with baking paper.
- Slice each brie horizontally into three layers. Place the base layer of brie in the centre of each puff pastry square, top with filling, then repeat, finishing with brie on top.
- Fold pastry over to enclose the brie. Brush with egg wash, sprinkle with sesame seeds, and bake 30–35 mins or until golden. Cool 30 mins, then garnish with dill and pomegranate pearls.
