GREEN Recipes – Rocket With Fried Haloumi
Enjoy the fresh flavours of GREEN Recipes – Rocket With Fried Haloumi by Australian Bush Spices. This vibrant salad combines peppery rocket with golden fried haloumi for a quick and delicious dish, perfect for entertaining, light lunches, or easy weeknight meals.

Ingredients
- Serves 4 as a light meal or entrée
- 1 tablespoon olive oil
- 500g haloumi, cut into thick slices
- 1 tablespoon lemon juice
- 150g baby rocket
- 1 ripe tomato, finely chopped
- 1½ tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 tablespoon balsamic vinegar
- 2 teaspoons honey
- 2 tablespoons GREEN Australian Bush Spice
Instructions
- Heat the oil in a fry pan, add the haloumi and cook over medium heat until crisp and golden on both sides.
- Remove from the heat and drizzle with the lemon juice.
- Place the rocket and tomato into a bowl.
- Whisk together the olive oil, lemon juice, vinegar, honey and half of the GREEN spice. Pour over rocket and toss to coat.
- Stack haloumi onto plates, top with rocket salad and sprinkle with remaining GREEN spice.
