Brown Butter Apple Blondie With Caramelised Honey

Indulge in the rich flavours of this Brown Butter Apple Blondie with Caramelised Honey recipe, crafted with premium Manuka Honey and finished with a sprinkle of Pink Salt Flakes. Ingredients

  • Serves 10 Prep 20 mins (+ 35 mins cooling time) Cooking 45 mins
  • 175g unsalted butter, chopped
  • 2 medium Granny Smith apples, cored, peeled
  • 1/4 tsp ground cinnamon
  • 1/2 cup (110g) brown sugar, divided
  • 1 cup (220g) caster sugar
  • 2 extra-large Australian eggs
  • 1½ cups (185g) plain flour
  • 1 tsp baking powder
  • 1 tsp Pink Salt Flakes
  • 1 cup (125ml) Manuka Honey
  • ¼ cup (60ml) thickened cream
  • Vanilla ice cream, to serve

Instructions

  1. Preheat oven to 180°C (160°C fan-forced). Place a 25cm ovenproof frying pan over medium heat. Add the butter and cook, stirring, for 5 mins or until golden. Pour browned butter into a heatproof jug, reserving 2 tsp in the pan. Cool 20 mins.
  2. Thinly slice the apples. Return the pan to medium heat, add apples, cinnamon and 1 tbsp brown sugar. Cook 5 mins until softened. Cool slightly.
  3. Mix browned butter, caster sugar, eggs, vanilla and remaining brown sugar. In a separate bowl, whisk flour, baking powder and salt. Fold flour mixture into butter mixture, then gently fold in apples.
  4. Spread batter evenly in a clean frying pan. Bake 35 mins until edges are golden and centre slightly soft. Cool 15 mins.
  5. Meanwhile, heat honey in a saucepan until golden and bubbling (about 8 mins). Remove from heat and whisk in cream to make caramel honey.
  6. Serve blondie topped with vanilla ice cream and warm honey caramel. Enjoy immediately.
