BLUE Recipes – Prawn Cocktail

Ingredients
- Serves 4
- 2 tablespoons macadamia oil
- 1 tablespoon BLUE Australian Bush Spice
- 500g green prawns, peeled & deveined (tails intact)
- 200g mixed salad leaves
- 2 tablespoons macadamia oil (extra)
- 2 teaspoons grated palm sugar
- 2 tablespoons lime juice
Instructions
- Toss prawns with macadamia oil and BLUE spice.
- Heat a pan, cook prawns 2–3 mins each side until pink and tender.
- Arrange mixed leaves on a plate and top with cooked prawns.
- Whisk macadamia oil, palm sugar and lime juice. Drizzle over and serve.
