Ingredients
- Serves 4
- 500g peeled chopped potatoes
- 50g butter
- 50g Parmesan, finely grated
- 1/2 cup milk
- 4 salmon steaks
- 1 tablespoon BLUE Australian Bush Spice
- 1–2 tablespoons olive oil
Instructions
- Crust salmon on both sides with BLUE spice. Heat oil in a fry pan and cook salmon over medium heat until crisp and cooked to your liking.
- Boil potatoes, drain, then add butter and Parmesan. Beat until smooth and creamy, adding milk if
needed. - Serve salmon with mashed potato and halved finger limes or lemon wedges.
