Ingredients
- Serves 4
- 4 rainbow trout
- 8 lemon myrtle leaves or bay leaves
- 2 lemons, sliced
- 50g butter, softened
- 2 tablespoons BLUE Australian Bush Spice
- 1 clove garlic, crushed
Instructions
- Rinse the fish and pat dry using paper towels.
- Blend the butter, BLUE spice and garlic until smooth.
- Spread the butter over the skin of the fish. Tear off four sheets of foil large enough to enclose each trout.
- Divide the lemon myrtle or bay leaves and lemon slices between the fish and place inside the cavity.
- Wrap tightly in foil. Cook on a preheated barbecue grill for 10–15 minutes or until flesh flakes easily.
- Serve in the foil package on a platter with salad.
