BLUE Recipes – BBQ Trout

Enjoy the fresh flavours of BLUE Recipes – BBQ Trout with premium seasonings from Australian Bush Spices. This easy BBQ trout recipe combines smoky, aromatic bush spices with tender trout for a delicious Australian-inspired seafood dish perfect for outdoor entertaining.

Cook Time: 20 minutes

Ingredients

  • Serves 4
  • 4 rainbow trout
  • 8 lemon myrtle leaves or bay leaves
  • 2 lemons, sliced
  • 50g butter, softened
  • 2 tablespoons BLUE Australian Bush Spice
  • 1 clove garlic, crushed

Instructions

  1. Rinse the fish and pat dry using paper towels.
  2. Blend the butter, BLUE spice and garlic until smooth.
  3. Spread the butter over the skin of the fish. Tear off four sheets of foil large enough to enclose each trout.
  4. Divide the lemon myrtle or bay leaves and lemon slices between the fish and place inside the cavity.
  5. Wrap tightly in foil. Cook on a preheated barbecue grill for 10–15 minutes or until flesh flakes easily.
  6. Serve in the foil package on a platter with salad.
